If you're looking to tame a good creature, use a mod such as Awesome Spyglass:

The first thing you want to look for is the level. A rule that I follow is tame only the creatures that are max level or down to 20 levels lower. So if the max level is 150, I'm looking for creatures that are levels 150-130. Any levels below that I'm not going to bother taming. (You do still want to try to go for max level though.)
Now I normally just stop there. However, I'm finding more and more that there are some important stats that you want to be higher than some other stats.
Stats that you want to be high *for most creatures
- Health
- Stamina
- Weight
- Melee Damage
The others don't really matter for most tames.
So looking at this max level wyvern:
It's Oxygen has the most points.... that's not good. It doesn't use it's oxygen stat. (it's not a sea creature). It's health is good, but some of its lowest stats are melee damage and weight (both at (27-0)). So even though this is a max level creature, it's stats kinda suck. I'm probably not going to tame this one.
Let's look at those stats again...
The numbers in the parenthesis -> ( ) is what we're looking at. The left number is the points it already has. A wild creatures level determines how many points it has, but the points are distributed randomly by the game. The points on the right are the ones the player assigns to the creature when it levels up, should the player tame this creature.
This is why I said...
Stats that you want to be high *for most creatures
- Health
- Stamina
- Weight
- Melee Damage
For wild creatures, you are wanting those stats to be high
before you tame. This can be tough because the game randomizes the stats.

Oh, and when you breed, only the original wild stats are counted, NOT the stats you assign.
